Lunchtime Special: Cauliflower Quesadilla and Salsa
As experimental as I am in the kitchen, I am very much a creature of habit - a lover of routine. Every Sunday I prep my breakfast, lunch and dinner for week. I typically make two different breakfasts and lunches, just to make sure I can switch it up. But that simply means I have two types of salads with slightly different toppings and dressings. Needless to say, this becomes boring and leaves me wanting more. I have no one to blame but myself. I am aware that salads aren’t the only healthy thing I can eat for lunch so lately I have been pushing myself to do better.
That’s how I came up with the recipe below. I try not to allow wheat take over too much of my diet so I have been playing around with substitutes. Once I realized cauliflower can be a substitute, I figured I would take it a step further...I mean, bread is bread- right?!
Money Matters
I spent about $12, which comes out to $6/serving. I had all of the seasonings so this is on the lower side of the potential cost. Also, if you are adding more to the quesadilla, you can easily make 4 servings - see #ROGUElyfe.

This is a super basic recipe that needs your touch to make it more. The more you add to the filling, the more filling it becomes. The filling is the difference between 2 and 4 servings.
I would suggest adding whatever you enjoy in your typical quesadilla to this one. The tortillas are fairly strong so fill them up!
Maybe you don’t want a quesadilla...maybe you want tacos? GO FOR IT!
My Recipe
Cheese Quesadilla (2 servings)
8 Cauliflower tortillas
1 ½ cups of grated cheese of your choosing
2 tbsp of olive oil
Fresh Salsa
3 tomatoes
½ yellow onion
2 cloves of garlic
1 jalapeno
1 tbsp of cilantro (or cilantro paste)
1 tbsp of cumin
1 tbsp of coriander
1 tsp of salt
1 tsp of pepper
Juice of 1 lemon
Directions
Prepare the cauliflower tortillas as directed.
As the tortillas are baking, add the tomatoes, onion, garlic, jalapeno, and cilantro to a food processor or blender.
Once the vegetables are well minced, mix in the seasonings and lemon juice.
Heat a skillet with part of the olive oil on medium heat. Using two of the tortillas, place part of the grated cheese in between the tortilla. Add the tortilla to the skillet and allow the cheese to melt for 5-7 minutes on both sides. Repeat with the other six tortillas.
Serve the quesadilla with the salsa and enjoy.
